The Monte Somma Ancient Tomato Purée – Roots is the finest and most velvety version of the Vesuvian tomato from the region. It originates from ancient Monte Somma tomatoes, grown on sandy and lapilli soils, hand-picked at peak ripeness and processed within hours of harvest.

The fruits are selected, briefly blanched, and passed until achieving a silky texture, without skins or seeds, yet retaining all the natural sweetness and slight acidity that enhances the dish. In the jar, you’ll find a vivid and intense red, the aroma of freshly picked tomato, a hint of Mediterranean herbs, and that mineral note typical of Monte Somma soils.

We chose the Monte Somma Ancient Tomato Purée – Roots because it combines three things that are fundamental to us: true territory, clean processing, clear taste. The raw material comes from the slopes of Monte Somma, with that mix of sweetness and minerality you recognize at the first spoonful. The processing is essential, respectful, without shortcuts: just tomato, salt (if needed), and the right cooking time.

It’s a purée that behaves as we want in the kitchen: doesn’t overpower, doesn’t “stain” the dish, but enhances it in depth. It’s the ideal base for our idea of “mineral, elegant, gourmet” cuisine, from the simplest recipes to service preparations.

Product: Monte Somma Ancient Tomato Purée – Roots

Raw material: Ancient Monte Somma tomatoes (local selections), hand-picked at peak ripeness.

Ingredients:

  • Ancient tomato from Monte Somma

  • Sea salt

Tomato origin: Italy – Vesuvian area, slopes of Monte Somma.

Processing:

  • Hand-picking of ripe fruits

  • Selection, washing, and brief blanching

  • Passing through a sieve to remove skins and seeds

  • Optional addition of sea salt

  • Hot filling in glass and pasteurization

  • Cooling and storage

 

Consistency: Velvety purée, fluid but not watery, without visible skins or seeds.

Format: Glass jar 580 ml

Usage:

  • Directly into cooking for quick sauces (5–10 minutes of cooking)

  • Base for fish sauces, white ragù “tinged” with red, pasta dressings, pizzas, and meat/vegetable mains

  • Also great simply heated with EVO oil, basil, or oregano

Storage:

  • Before opening: store in a cool, dry place away from heat sources and direct light

  • After opening: refrigerate in a closed container and consume within 3 days
