Tomato origin: Italy – Vesuvian area, slopes of Monte Somma.
Processing:

Hand-picking of ripe fruits

Selection, washing, and brief blanching

Passing through a sieve to remove skins and seeds

Optional addition of sea salt

Hot filling in glass and pasteurization

Cooling and storage
Consistency: Velvety purée, fluid but not watery, without visible skins or seeds.
Format: Glass jar 580 ml
Usage:

Directly into cooking for quick sauces (5–10 minutes of cooking)

Base for fish sauces, white ragù “tinged” with red, pasta dressings, pizzas, and meat/vegetable mains

Also great simply heated with EVO oil, basil, or oregano
Storage:

Before opening: store in a cool, dry place away from heat sources and direct light

After opening: refrigerate in a closed container and consume within 3 days
