The SEMIDRY – Dried piennolo tomatoes preserved in oil Radici are the most intense and delicious version of the Vesuvian piennolo. We start with piennolo tomatoes grown on the slopes of Vesuvius, hand-picked at their peak sweetness. The fruits are selected, sliced, partially dried to concentrate sugars and aromas, and then immersed in oil (preferably extra virgin) with essential seasoning.

The result is a soft and meaty tomato, with a full flavor: natural sweetness, a savory touch, a nice umami note, and that mineral hint from the Vesuvian territory. In the mouth, they are juicy but not watery, perfect when you want to add depth without long cooking.

We chose the SEMIDRY – Dried piennolo tomatoes preserved in oil because they concentrate everything we love about piennolo: sweetness, savoriness, volcanic character. Partial drying enhances their confit aspect, and the oil captures their aromas, making them ready to use in countless situations, from aperitifs to service kitchens.   • Partially dried piennolo tomatoes

  • Oil

  • Sea salt

  • Herbs/spices (e.g., garlic, oregano, chili) – if present

 

Tomato origin:

Italy – Vesuvian Area (Vesuvius / Monte Somma).

Processing:

  • Hand-picking of piennolo tomatoes

  • Selection and washing

  • Halving/slicing and partial drying (air/low-temperature oven)

  • Jar conditioning with oil, salt, and seasoning

  • Sealing and thermal treatment (pasteurization)

  • Cooling and storage

 

Product characteristics:

  • Color: deep red

  • Texture: soft, meaty, “confit tomato” effect

  • Flavor: sweet, slightly savory, rich, with umami notes and a hint of mineral
